Tomato Soup with Meatballs

Two classics in one pot – filling enough as a complete meal.

Ingredients
- 800 g chopped tomatoes
- 300 g minced beef
- 55 g egg
- 80 g onion
- 8 g garlic
- 15 g olive oil
- 300 g stock
- 50 g cream
- 8 g spices
Preparation
- Knead the ground beef with the egg, half of the finely diced onion, salt, pepper and paprika and shape into small meatballs.
- Sweat the remaining onion and the garlic in the olive oil, add the chopped tomatoes and broth and simmer for 10 minutes.
- Purée the soup (or leave it chunky), add the meatballs and let them cook gently for 12 minutes – do not let it boil hard.
- Stir in the cream and season with oregano, salt and pepper.
The carbs come entirely from tomatoes (about 13 g per serving) – combined with 24 g of protein from the meatballs, a flat, slow curve instead of a sugar spike.
