Tomato Soup with Meatballs

Two classics in one pot – filling enough as a complete meal.

Ingredients

  • 800 g chopped tomatoes
  • 300 g minced beef
  • 55 g egg
  • 80 g onion
  • 8 g garlic
  • 15 g olive oil
  • 300 g stock
  • 50 g cream
  • 8 g spices

Preparation

  1. Knead the ground beef with the egg, half of the finely diced onion, salt, pepper and paprika and shape into small meatballs.
  2. Sweat the remaining onion and the garlic in the olive oil, add the chopped tomatoes and broth and simmer for 10 minutes.
  3. Purée the soup (or leave it chunky), add the meatballs and let them cook gently for 12 minutes – do not let it boil hard.
  4. Stir in the cream and season with oregano, salt and pepper.

The carbs come entirely from tomatoes (about 13 g per serving) – combined with 24 g of protein from the meatballs, a flat, slow curve instead of a sugar spike.

  • 8 g knoblauch
  • 15 g olivenoel
  • 300 g bruehe
  • 50 g sahne
  • 8 g gewuerze
