Beef Steak with Green Asparagus and Herb Butter

Simple and good – cook the steak properly, nothing more is needed.

Ingredients
- 400 g beef steak
- 500 g green asparagus
- 30 g butter
- 10 g olive oil
- 10 g herbs
- 3 g spices
Preparation
- Take the steaks out of the fridge 30 minutes ahead and pat them dry.
- Knead the butter with the chopped herbs, salt and pepper and chill it.
- Peel the lower third of the asparagus and fry it in the olive oil for 6–8 minutes, then salt.
- Sear the steaks in a very hot pan for 2–3 minutes per side, season and rest for 5 minutes. Serve with the herb butter and asparagus.
Under 5 g of carbs on the entire plate. Protein and fat trigger hardly any glucose response – the difference from a side of fries is unmistakable in the CGM (n = 1).
