Ingredients

  • 250 g skyr
  • 75 g blueberries
  • 75 g raspberries
  • 20 g walnuts
  • 15 g flaxseed
  • 2 g cinnamon

Preparation

  1. Put the skyr in a bowl and stir until smooth – for a creamier texture, stir in a splash of sparkling water.
  2. Wash the berries and spread them over the skyr (frozen berries work just as well – let them thaw briefly).
  3. Roughly chop the walnuts and sprinkle them on top together with the ground flaxseed.
  4. Dust with cinnamon. Done.

Around 35 g of protein and 15 g of fiber for breakfast. Berries are among the lowest-sugar fruits; fat, protein and fiber slow glucose absorption. In my CGM data (n = 1), one of the flattest breakfasts of all.
