Ingredients
- 250 g skyr
- 75 g blueberries
- 75 g raspberries
- 20 g walnuts
- 15 g flaxseed
- 2 g cinnamon
Preparation
- Put the skyr in a bowl and stir until smooth – for a creamier texture, stir in a splash of sparkling water.
- Wash the berries and spread them over the skyr (frozen berries work just as well – let them thaw briefly).
- Roughly chop the walnuts and sprinkle them on top together with the ground flaxseed.
- Dust with cinnamon. Done.
Around 35 g of protein and 15 g of fiber for breakfast. Berries are among the lowest-sugar fruits; fat, protein and fiber slow glucose absorption. In my CGM data (n = 1), one of the flattest breakfasts of all.
