Scrambled Eggs with Smoked Salmon

Ingredients
- 220 g egg
- 100 g smoked salmon
- 15 g butter
- 10 g herbs
Preparation
- Whisk the eggs and season with pepper – go easy on the salt, the salmon brings plenty.
- Melt the butter in a non-stick pan and let the eggs set slowly over medium heat, pushing rather than stirring them.
- Cut the smoked salmon into strips and fold it in at the very end so it doesn't overcook.
- Sprinkle with chives and serve immediately.
