Scrambled Eggs with Smoked Salmon

Ingredients

  • 220 g egg
  • 100 g smoked salmon
  • 15 g butter
  • 10 g herbs

Preparation

  1. Whisk the eggs and season with pepper – go easy on the salt, the salmon brings plenty.
  2. Melt the butter in a non-stick pan and let the eggs set slowly over medium heat, pushing rather than stirring them.
  3. Cut the smoked salmon into strips and fold it in at the very end so it doesn't overcook.
  4. Sprinkle with chives and serve immediately.

Virtually no carbohydrates (under 2 g per serving) with 24 g of protein – a breakfast that keeps the morning glucose curve flat.
