Salmon on Creamed Spinach with Cauliflower Rice

Omega-3 meets vegetables – the cauliflower rice follows the chicken fricassee principle.

Ingredients
- 300 g salmon
- 450 g spinach
- 100 g cream
- 60 g onion
- 5 g garlic
- 10 g butter
- 400 g cauliflower
- 10 g olive oil
- 10 g lemon juice
- 3 g spices
Preparation
- Chop the cauliflower into "rice" and fry it in the olive oil for 6–8 minutes, season.
- Sweat the onion and garlic in the butter, add the well-squeezed spinach.
- Pour in the cream, season and simmer for 5 minutes until creamy.
- Season the salmon, drizzle with lemon and fry for 3–4 minutes per side – glassy inside. Plate everything.
Oily sea fish provides long-chain omega-3 fatty acids (EPA/DHA). The German Nutrition Society recommends one to two fish meals per week – this dish covers one of them, with around 10 g of carbs per serving.

- 400 g blumenkohl
- 10 g olivenoel
- 10 g zitronensaft
