Kohlrabi Fries with Herb Quark

The side-dish solution – crispy oven vegetables plus a protein dip with flaxseed oil.

Ingredients
- 600 g kohlrabi
- 15 g olive oil
- 4 g spices
- 250 g low-fat quark
- 30 g mineral water
- 10 g herbs
- 10 g linseed oil
- 5 g lemon juice
Preparation
- Peel the kohlrabi, cut it into finger-thick sticks, pre-cook for 5 minutes and drain very well.
- Toss with the oil and spices and spread them out on the tray with space between them.
- Bake at 200 °C fan (392 °F) for about 30 minutes, turning halfway.
- Stir the quark with the sparkling water until creamy, mix in the herbs, flaxseed oil, lemon juice, salt and pepper and serve as a dip.
Kohlrabi has around 3.7 g of carbs per 100 g – potatoes about 15 g. The flaxseed oil in the quark provides plant-based omega-3 (ALA).
