Ingredients

  • 500 g mixed minced meat
  • 55 g egg
  • 80 g onion
  • 30 g ground almonds
  • 500 g stock
  • 150 g cream
  • 20 g capers
  • 15 g lemon juice
  • 10 g mustard
  • 10 g butter
  • 4 g spices

Preparation

  1. Knead the ground meat with the egg, finely diced onion, ground almonds (they replace the bread roll), salt and pepper and shape into dumplings.
  2. Heat the broth and let the dumplings poach gently in it for 15 minutes, then remove them.
  3. Reduce the broth by about half, add the cream and reduce for another 5 minutes until creamy.
  4. Stir in the butter, mustard, capers and lemon juice, return the dumplings and season. Cauliflower mash (see Sides) goes well with this.

Traditionally a carb-heavy dish with roux, bread roll and boiled potatoes – this way it stays around 7 g of carbs per serving, and the flavor stays fully intact.

  • 30 g mandeln_gemahlen
  • 500 g bruehe
  • 150 g sahne
  • 20 g kapern
  • 15 g zitronensaft
  • 10 g senf
  • 10 g butter
  • 4 g gewuerze

Preparation
