Cod in Mustard Sauce with Cauliflower Mash

A north German classic – the mustard sauce needs no roux.

Ingredients
- 400 g cod
- 150 g cream
- 25 g mustard
- 100 g stock
- 10 g butter
- 10 g lemon juice
- 500 g cauliflower
- 50 g milk
- 10 g herbs
- 3 g spices
Preparation
- Boil the cauliflower florets in salted water for 12 minutes until very soft, drain, purée finely with the milk and half the butter and season with salt and nutmeg.
- Reduce the broth with the cream for 5 minutes, stir in the mustard and remaining butter, do not boil again, season with lemon juice.
- Season the cod and fry it gently in a non-stick pan for 3–4 minutes per side.
- Plate with the sauce and mash and sprinkle with dill or parsley.
Lean fish, under 10 g of carbs per serving. Cauliflower mash replaces boiled potatoes – saving around 25 g of carbs per serving.

- 10 g zitronensaft
- 500 g blumenkohl
- 50 g milch
- 10 g kraeuter
- 3 g gewuerze
