Clear Chicken Soup with Vegetables

Ingredients

  • 300 g chicken breast
  • 150 g leek
  • 150 g carrot
  • 200 g cauliflower
  • 1000 g stock
  • 10 g herbs
  • 4 g spices

Preparation

  1. Bring the broth to the boil, add the whole chicken breast and let it poach gently for 15 minutes (do not boil), then remove it.
  2. Cut the leek, carrot and cauliflower into small pieces and cook them in the broth for 8–10 minutes until tender but firm.
  3. Dice the chicken and return it to the soup, season with salt, pepper and parsley.

Around 6 g of carbs per serving, half of it from the carrot. After short nights I deliberately reach for something like this – stress and lack of sleep push my glucose up even without food (n = 1), so the meal doesn't need to add to it.

  • 150 g porree
  • 150 g karotte
  • 200 g blumenkohl
  • 1000 g bruehe
  • 10 g kraeuter
  • 4 g gewuerze
