Garlic Shrimp with Zoodles

Zucchini noodles instead of spaghetti – the pan replaces the pasta pot.

Ingredients
- 300 g prawns
- 600 g courgette
- 10 g garlic
- 20 g olive oil
- 200 g tomato
- 10 g lemon juice
- 10 g herbs
- 3 g spices
Preparation
- Cut the zucchini into noodles with a spiralizer (or vegetable peeler).
- Pat the shrimp dry. Let the garlic slices infuse in the olive oil, fry the shrimp for 2–3 minutes and remove them.
- Briefly fry the diced tomatoes, add the zoodles and toss for only 2–3 minutes – they should stay firm.
- Return the shrimp and season with lemon juice, salt, chili and herbs.
Spaghetti would mean 70–80 g of carbs per serving here – the zoodle version comes in around 12 g. That difference in the glucose curve is the core of my strategy.

- 10 g kraeuter
- 3 g gewuerze
