Garlic Shrimp with Zoodles

Knoblauch-Garnelen mit Zoodles

Zucchini noodles instead of spaghetti – the pan replaces the pasta pot.

Ingredients

  • 300 g prawns
  • 600 g courgette
  • 10 g garlic
  • 20 g olive oil
  • 200 g tomato
  • 10 g lemon juice
  • 10 g herbs
  • 3 g spices

Preparation

  1. Cut the zucchini into noodles with a spiralizer (or vegetable peeler).
  2. Pat the shrimp dry. Let the garlic slices infuse in the olive oil, fry the shrimp for 2–3 minutes and remove them.
  3. Briefly fry the diced tomatoes, add the zoodles and toss for only 2–3 minutes – they should stay firm.
  4. Return the shrimp and season with lemon juice, salt, chili and herbs.

Spaghetti would mean 70–80 g of carbs per serving here – the zoodle version comes in around 12 g. That difference in the glucose curve is the core of my strategy.

  • 200 g tomate
  • 10 g zitronensaft
  • 10 g kraeuter
  • 3 g gewuerze
