Chili con Carne (Deliberately with Beans)

Legumes are not the enemy – used here deliberately and in moderation.

Ingredients
- 500 g minced beef
- 250 g kidney beans
- 800 g chopped tomatoes
- 200 g red pepper
- 120 g onion
- 10 g garlic
- 15 g olive oil
- 30 g tomato purée
- 12 g spices
Preparation
- Sweat the onion and garlic in the olive oil, add the ground beef and brown it well until crumbly.
- Briefly toast the tomato paste, chili, cumin and paprika.
- Add the chopped tomatoes and diced pepper and simmer uncovered for 25 minutes.
- Add the drained kidney beans, simmer for another 10 minutes and season generously.
A deliberate exception to "as few carbs as possible": legumes have a low glycemic index, plenty of protein and fiber. Around 21 g of carbs per serving that arrive slowly – in my CGM data (n = 1) clearly flatter than the same amount of carbs from rice.
