Cauliflower Mash

The mashed-potato replacement – creamy thanks to butter and Parmesan.

Ingredients

  • 800 g cauliflower
  • 30 g butter
  • 50 g milk
  • 30 g Parmesan
  • 3 g spices

Preparation

  1. Boil the cauliflower florets for 12–14 minutes until very soft and drain them well – residual water makes the mash watery.
  2. Purée very finely with the butter and milk.
  3. Stir in the Parmesan and season with salt, pepper and nutmeg.

Around 6 g of carbs per serving instead of 25–30 g for mashed potatoes – works with anything that usually comes with mash (e.g. the Königsberger Klopse).

  • 30 g parmesan
  • 3 g gewuerze
