Ingredients

  • 1000 g quark (40% fat in dry matter)
  • 220 g egg
  • 150 g erythritol
  • 40 g starch
  • 30 g lemon juice
  • 3 g spices

Preparation

  1. Preheat the oven to 160 °C fan (320 °F), grease a 26 cm springform pan or line it with baking paper.
  2. Stir the quark, eggs, erythritol, cornstarch, lemon juice and vanilla until smooth – do not whip, or the cake will crack.
  3. Pour into the pan and bake for 55–60 minutes until the center still wobbles slightly.
  4. Let it cool in the switched-off oven with the door open, then chill – it firms up overnight.

Per slice, the table shows a calculated 18 g of carbs – 12.5 g of that is erythritol, which has practically no effect on blood sugar and is excreted unmetabolized. Actually active: around 6 g of carbs per slice. For comparison: classic cheesecake runs 30–40 g.
